NFS 2260 Foods and Nutrition of World Cultures 3.0 Credits

This course explores global and cultural perspectives on food and nutrition, emphasizing the diversity of dietary practices and their nutritional implications. Students will examine the nutritional status of populations in various regions of the world, the prevalence and treatment of nutrient deficiency diseases, and challenges related to food supply, accessibility, and sustainability. Attention is given to cultural groups within the United States, with a focus on culturally responsive approaches to nutrition education and communication. Contemporary issues in global nutrition and efforts to improve food and nutrition security are also addressed.

The curriculum also addresses current issues including dietary guidelines, exercise and nutrition, and wellness and weight management. It prepares students for careers or further study in healthcare, dietetics, wellness, community nutrition, and health promotion.
