NFS 5206 Nutrition Assessment through Lifecycle 3.0 Credits
This course provides an overview of nutrient requirements throughout the lifecycle. This course is designed to introduce students to and provide hands-on experience with the four primary methods of nutritional assessment: dietary, anthropometric, laboratory and clinical assessment. Assessment methodology appropriate to each stage of the life cycle will be used. The curriculum includes the role of macronutrients and micronutrients in physiology of each lifecycle. Inclusion of the role of both macro- and micro-nutrients in the biochemistry and physiology of nutrient metabolism in the lifestage will also be covered. Current research on the role of nutritional supplements, antioxidants, phytochemicals, and functional foods in the lifecycle will be explored.
